The Perfect Potato Salad

Make it stand out

This is a summer season must. The crunch, the flavour & freshness is the perfect mix. Perfect with rocket or as part of a BBQ feast

Ingredients

  • A bag of baby new potatoes or equivalent

  • 1 bag of radishes or equivalent

  • 1 bag of sugar snap peas or equivalent

  • 1 tin canellini beans

  • 1 red onion

  • 1 handful of dill

  • A batch of our Vegan Aioli

  • Seasoning to taste

Method

  • Boil or steam the new potatoes then cut into bite sized pieces when cooled

  • Finely chop the onion, dill & radish & slice the sugar snap peas into chunks

  • Put into a big bowl with the beans & potatoes & mix with the aioli & dill

  • Put in the fridge & serve when ready. It keeps well for a few days in an airtight container

  • Enjoy!
