Vegan Aioli

A rich, creamy indulgence worth keeping in the fridge!

So its important to note here that just because something doesn’t have meat/dairy doesn’t automatically make it healthier - mayonnaise is predominantly olive oil, and same goes for this, so although it is a delicious alternative, it should still be consumed as part of a balanced diet

Ingredients

3 tablespoons aquafaba (chickpea juice)

1 teaspoon apple cider vinegar

Juice of a lemon

Seasoning to taste

Bottle of olive oil (you will want about a cup but pour from bottle)

Method

Pour the aquafaba into a blender along with the garlic, apple cider vinegar and some seasoning. Blend until mixed, then slowly, with the blender still running, drizzle olive oil into the mix. Keep pouring until you get a thick creamy consistency and the mixture turns a pale yellow. You can stop when you reach the consistency you desire.

Store in the fridge for up to a week in a sterile, airtight container
