Sweet Potato Fries
Sweet Potato Fries with Coconut & Lime Dressing
Quick & easy, but lots of flavour, packed with nutrients & a great twist on a family favourite
Ingredients
- 1 medium sweet potato per person 
- Olive oil 
- Salt 
- Paprika (I use smoked) 
For the dressing
- 1 tin coconut milk 
- 1 teaspoon tahini 
- Juice of a lime 
- Seasoning to taste 
Method
Chop the sweet potato into chip shapes, I tend not to make them too long as sweet potato doesn’t always go as crispy as potato chips.
Mix in a bowl with the oil, salt & paprika, then sprinkle evenly across a baking tray & put in a medium oven for about 20 minutes. At 10 minutes give them a shake & mix around to cook evenly. After 20 minutes I tend to turn the oven up to crisp them up, but go by your own oven, so keep checking & turning them until they are crisp & evenly cooked
For the dressing, if kept cool coconut milk in a can tends to separate, so I scoop off the creamed part (you can use the water in a smoothie!), then put in a pan to melt, adding the tahini, lime juice & seasoning to taste - you can add some of the coconut water if you want it more thin. Simply sprinkle some on the sweet potatoes to serve & use as a side of dipping sauce (note that if you refrigerate any leftover sauce it will set again, so just pop in a bowl of warm water).
