l our tummies!

I am a big fan of dips & having quick access, nutritional snacks at the ready.

We always keep a loaf of sourdough sliced in the freezer along with tomatoes & cucumber to pack in the nutrients & fill our tummies!

Ingredients

  • 4 aubergines sliced into quarters lengthways

  • olive oil

  • salt & pepper

  • Juice of a lemon

  • teaspoon of tahini

  • garlic

Method

Roast the aubergines on a baking tray drizzled with some olive oil and salt for about 30 -40 minutes until soft & the skin comes away easily.

Pop the aubergines (skin on!) in a blender with the garlic, tahini, lemon & some more seasoning to taste. Taste the mix as you go as you can add more/less of each of them according to taste

Store in an airtight container in the fridge best enjoyed warm & fresh but can be eaten over next few days
