Grilled Tofu & Caper Dressing

A firm favourite adapted from my childhood favourite Cypriot dish of halloumi… the tangy, zesty lime dressing goes so well with the crispy tofu & crunchy salad

Ingredients

  • 1 x pack firm tofu

  • Lettuce of choice

  • Plain flour seasoned with pinch of salt

For the Dressing

  • Few teaspoons capers finely chopped

  • Teaspoon wholegrain mustard

  • Zest & juice of 2 limes

  • Couple cloves of garlic crushed

  • Few teaspoons white wine vinegar

  • Generous glug of extra virgin olive oil

  • Handful fresh coriander chopped

  • Salt & pepper to taste

Method

  • Drain & compress the tofu with paper towels to dry out as much as possible

  • Thinly slice & then coat in flour

  • Fry in a drizzle of extra virgin olive oil until golden on both sides

  • For the dressing, simply mix all the ingredients into a jug & stir well. Add as much oil for desired consistency

  • Create a bed with lettuce then top with the tofu & finally drizzle dressing on top - enjoy!
