Grilled Tofu & Caper Dressing

A firm favourite adapted from my childhood favourite Cypriot dish of halloumi… the tangy, zesty lime dressing goes so well with the crispy tofu & crunchy salad
Ingredients
1 x pack firm tofu
Lettuce of choice
Plain flour seasoned with pinch of salt
For the Dressing
Few teaspoons capers finely chopped
Teaspoon wholegrain mustard
Zest & juice of 2 limes
Couple cloves of garlic crushed
Few teaspoons white wine vinegar
Generous glug of extra virgin olive oil
Handful fresh coriander chopped
Salt & pepper to taste
Method
Drain & compress the tofu with paper towels to dry out as much as possible
Thinly slice & then coat in flour
Fry in a drizzle of extra virgin olive oil until golden on both sides
For the dressing, simply mix all the ingredients into a jug & stir well. Add as much oil for desired consistency
Create a bed with lettuce then top with the tofu & finally drizzle dressing on top - enjoy!
