Grilled Tofu & Caper Dressing

A firm favourite adapted from my childhood favourite Cypriot dish of halloumi… the tangy, zesty lime dressing goes so well with the crispy tofu & crunchy salad
Ingredients
- 1 x pack firm tofu 
- Lettuce of choice 
- Plain flour seasoned with pinch of salt 
For the Dressing
- Few teaspoons capers finely chopped 
- Teaspoon wholegrain mustard 
- Zest & juice of 2 limes 
- Couple cloves of garlic crushed 
- Few teaspoons white wine vinegar 
- Generous glug of extra virgin olive oil 
- Handful fresh coriander chopped 
- Salt & pepper to taste 
Method
- Drain & compress the tofu with paper towels to dry out as much as possible 
- Thinly slice & then coat in flour 
- Fry in a drizzle of extra virgin olive oil until golden on both sides 
- For the dressing, simply mix all the ingredients into a jug & stir well. Add as much oil for desired consistency 
- Create a bed with lettuce then top with the tofu & finally drizzle dressing on top - enjoy!
