Ahhh…. the snack of champions! Such an easy, tasty way of getting a range of nutrients in one tasty, quick snack

I tend to keep jars of lots of different nuts & seeds so I would really recommend playing around with different ingredients to get a variety of sources into your diet each week.

Ingredients

  • 4 tbsp raw cacao powder

  • 4 tbsp peanut butter

  • 2 tbsp chia seeds

  • 4 - 5 dates

  • Handful oats

  • 1 tbsp coconut oil

  • 1 tbsp vanilla extract

Method

Blend on high until smooth (you may need to stop your mixer & stir ingredients back into the mix)

Then, have a taste of the mixture, do you like it? You can adjust the flavours to suit you, if you prefer it sweeter to add more dates/maple syrup, or if you want crunch you can add some nuts and blend for a few pulses more to keep the nuttiness, such as cashews or almonds

Finally scoop about a tablespoon of mix into the palm of your hand, roll into a ball then you can coat in some raw cacao powder (you can always mix with some cinnamon too!) or even desiccated coconut. Store in an airtight container (you can also freeze these in batches). Enjoy!
