Chickpea Tuna
There’s 2 sides of the fence with mimicking your favourite meat/fish dishes… some argue what’s the point in mimicking the real thing. I am not a fan of processed alternatives but I love creating versions of meals that offer a great nutritional balance & packed with flavour
Ingredients
Tin chickpeas (keep the liquid - aqua fava for things like vegan aioli)
Tablespoon chopped capers
Salt & Pepper
Tablespoon sweetcorn
Teaspoon nori (optional)
Squeeze lemon juice
Teaspoon apple cider vinegar
Method
Mash the chickpeas roughly so they’re broken up. Add the rest of the ingredients & stir. Season to taste.
Spoon into a flatbread/wrap/pita & enjoy! You can add a dollop of the vegan aioli/mayo if you fancy a creamier version
You can also add salad or my favourite - hot sauce!
