Pearl Cous Cous Salad

A delicious, quick & versatile plant based dish with cous cous

A veratile, quick & easy dish packed with colour & flavour & adaptable for whatever is in your fridge

Ingredients

  • A cup of pearl cous cous (or any type of cous cous)

  • Tin of chickpeas

  • Tin of blackbeans

  • Aubergine chopped to cubes

  • Spinach/kale chopped

  • Chopped tomatoes (fresh) or sun dried tomatoes

  • Herbs to taste (I used basil)

  • Harissa paste (teaspoon/to taste)

Method

  • Cook the cous cous as per the packet (as this varies)

  • Saute the vegetables & tofu (make sure to pat the tofu dry so it stays firm), you can use any veg you like, e.g. peppers, courgette, mushrooms)

  • When the cous cous is cooked stir in the harissa, if you find it too spicy, add some tomato puree instead & maybe a spash of olive oil

  • Stir in the cooked vegetables with the herbs & season to taste - enjoy!
