Banana Pancakes
My best bit of advice in the kitchen is to learn your textures. I rarely measure ingredients for the types of dishes I cook, as, with it all being plant based, I can taste as I go along & as long as the texture is right for what I am making, I can the adjust my ingredients to get the right consistency.
Ingredients
1 ripe mashed banana
A few tablespoons of flour (can be any flour)
1 teaspoon baking powder
Pinch of salt
Drizzle oat mylk
Method
Mix all the ingredients until it forms a batter (the thicker the batter the more American style)
Spoon into a hot pan (oil optional). When the mix has bubbles in gentle turn & cook for about a minute (or until you can shake pan & pancake moves)
Serve in a stack with fresh fruit & a big drizzle of maple syrup - enjoy!
