So if you know your way round a kitchen, you’ll have made soup and although I am sharing this simple ‘recipe’, the aim is to inspire/reassure you to just explore what you have!

Method


Start off making the ‘stock base’:

  • One onion

  • Two medium carrots

  • Three stalks celery

Sautee these until soft then add whatever other vegetables you like. I just added mushrooms here. Roughly chop then add to the mix & stir for a few minutes

Here I tend to add the salt & pepper as well as any spices I fancy (e.g. some cumin, cayenne pepper or paprika - experiment, little by little)

I then always add some sort of pulse/lentil (you could also use pasta/potato), here I added chickpeas & cannelini beans

Stir the mix for a few more minutes then add about a litre of water - this is up to you depending on how thick you want the soup

Once its come to the boil, simmer for about 45 mins, stirring occasionally, taste test & serve!
