The perfect light lunch for all

If you have a courgette or two lurking in the fridge, this quick, easy & flexible recipe is the perfect way to use them up

Ingredients

  • 1 onion grated

  • 1 or 2 courgettes grated

  • Plain flour

  • Seasoning

Method

  • Grate the onion, potato & courgette (I used a Magimix)

  • Place in a sieve & press out as much moisture as possible (you can also pat dry with a tea towel)

  • Put into a bowl & add a few tablespoons of plain flour, salt, pepper & if you fancy some paprika

  • Stir together then scoop into patties

  • Place in a pan on medium heat. I cooked on medium for longer to get the onion cooked through

  • Turn every few minutes to avoid burning

  • Once browned (about 5 - 10 minutes), serve with some chopped mint (you could also add plain yoghurt)
